The only thing I don’t understand now is why, if “buenos” should appear after the noun it modifies, we say “buenos días” and “buenas noches.” Is this just an exception to the rules you outlined?

I am really confused. Estoy bien = I am well. “Well” is an adjective, but “bien” is an adverb. And this was your first example! Is “Estoy bien” elliptical for ‘I am doing well?’
